Chicken Salad Variations

The basic building blocks of a portfolio are often called Core Funds. We need Core funds, but what we add around the Core funds provides variety, the spice of life. Allow us to demonstrate–

Tips:

The Basic Ingredients of Chicken, Carrots and Celery don’t change, but the spices and condiments can change the same ingredients from savory to curried. By the way, both of these are great with popovers. This recipe will make about four servings of chicken salad. Feel free to add greater quantities of the spices to suit your taste.

Ingredients:
  • 1 whole chicken breast, cooked and chunked
  • 2 stalks of celery, diced
  • 2 carrots, diced.
Instructions:

For the savory variation, add:

  • 2 Tablespoons fresh chopped parsley
  • ¼  teaspoon lemon pepper, or more to taste

The following fresh chopped spices, if available:

  • ½ teaspoon sage
  • ½  teaspoon rosemary
  • ½ teaspoon tarragon
  • Celery salt and ground black pepper to taste

Toss chicken and vegetables with spices, add 1 diced apple OR 17 grapes split lengthwise.  Dress with a dollop of mayonnaise.

For curried variation, add:

  • 2 teaspoons curry powder.  (Those that like hot curry can always add it to their portion.)
  • 1 Tablespoon Major Grey’s peach-mango chutney
  • 2 tablespoons hot and sweet banana peppers and/or sweet pickles, chopped
  • ¼ teaspoon lemon pepper, or more to taste.

Toss the chicken and vegetables with the spices and condiments.  To add interest, you can chop a tart apple and perhaps some fresh mango into this mix.  Dress with a dollop of yogurt. Can also serve with Nan instead of popovers.
